Paaaaancakes. In our previous advent calendar, I featured a number of recipes and I really enjoyed it. So this year I wanted to feature another, and while I am somewhat pants at cooking, I can actually make pannukakku pretty well. Pannukakku is a Finnish pancake and a pretty classic dessert, while there are a number of different recipes this is the one that I tend to use. Typically pancakes are served on Thursday in Finland alongside pea soup, most restaurants will be serving this as dish that day and during the winter it is the perfect way to warm up.
While it's not specifically a Christmassy dish, the weather is starting to turn making a night in pretty attractive, so for our third advent calendar post I wanted to share a recipe for some comfort-food pancakes.
While I'm a Brit (tea, crumpets, "I'm sorry about Brexit" etc), I have Finnish family, and one of the first dishes I learnt how to make was this type of pancake. So even if you're terrible at cooking or you have no idea what you're doing, it's a pretty easy first step. Also pancakes! Mmmm pancakes.
This is what you're going to need...
Pannukakku Recipe:
400 grams

Wheat Flour
|
---|---|
150 grams | Sugar (Granulated) |
1 teaspoon | Baking Powder |
1 teaspoon | Salt |
1 teaspoon | Vanilla Extract |
800 millilitres | Milk (Whole/Full Fat) |
2 (Medium) | Eggs |
100 millilitres | Butter (Melted) |
(Usually served with whipped cream and jam.)
Pannukakku Instructions:
1. Set the oven to pre-heat between 200-225°C (approximately 390-440°F).
2. Mix the flour, sugar, salt, and baking powder in a large mixing bowl.
3. Add the milk, a little at a time to make sure it gets mixed in.
4. Add the eggs, vanilla extract, and butter, and stir it in.
5. Once everything is mixed well, line a baking tray with a sheet of baking paper.
6. Carefully pour a little in the middle and fix any imperfections in the baking paper before pouring the rest.
7. Cook for approximately thirty minutes, but check a little after the twenty minute mark to make sure things are going smoothly.
8. Once ready, take the tray out of the oven and cut them into squares (approximately one square will be one serving), serve with whipped cream and jam.
